Message temp at start up, oil system in the car-wet sump vs dry sump, oil heater, etc. No doubt the synthetic 5W-x and 0W-x syn oils are better at start up to get the oil flowing but the wide spread in the viscosity ratings can only be for the lab made synthetics- not mineral oils since they require viscosity improver additives to get the oil cold - hot performance. So use a 0W-x synthetic, since they do not make a 0w-x mineral oil, and they have improved start up conditions. But beware that changing over to a synthetic from a mineral based oil in an engine with high mileage could cause seal/gasket leakage issues especially if the engine already has oil leaks.
