Owning a 300ZX can be challenging at times. From your post it sounds like your not mechanically inclined and that is a big negative. If you can't do it yourself you need to pay someone to do it, and you need to find someone that has worked on Z's before, or you'll be sorry. The other negative is that you don't know the service history of the vehicle. With the mileage your stating you should be close to doing the third timing belt service, which is a significant, expensive service. The hesitation your experiencing can be due to something simple like leaking vacuum hoses or more involved things such as a fuel pump or air mass sensor. You need to find a Z specialist to diagnose your problem or you'll be spending lots of money replacing things you don't need to. If your having doubts this early in the game you might want to let her go before your in over your head. I do all the work on my Z and I can't imagine what it would cost to have the work done by an independent shop. Hope this helps.
