Message	Car idling only when applying throttle is classic symptom. Could be from improperly seated plenum gasket after you replaced valve cover gaskets. (been there done that. exact symptoms you describe) or it could be the large throttle body hoses are not all the way on the underside of their fittings, or that you still have an open entry point from the whacked vacuum routing or halfway EGR bypass that you described.
