Message gas, i.e. increasing rpms the additional fuel makes the air/fuel mixture correct and that's why the car evens out.

Could be as simple as one of the large intake or intercooler hoses (if turbo) not being fully seated on the underside of it's connecting pipe. Or loose/cracked recirculation valve hoses. Could use mechanics mirror to check and also that all hose clamps are tight.

The only reason I suggest an air issue could be possible is that one time after a plenum pull I did not get the gasket seated properly and unbeknownst to me had a fairly large leak. After buttoning everything back up, the car had a hard time starting and then bogged down quickly, eventually stalling if the accelerator wasn't pressed. However, if I gave it gas to about 2k rpms the car would run and sound normal.

I pulled my hair out for a while trying to figure out what the problem was, before I broke down and re-pulled the plenum. There I discovered the gasket had gotten moved/torn and wasn't in the proper location. Put a new one on and the problem was gone.

Air regulator might be something else to check too.

Lastly, pinched/worn injector o-ring(s)? Of course no way to determine this without pulling plenum and inspecting. :-(
