I have found that air pockets are definitley possible and can lead to overheating, the best thing to do is lot the engine idle at a safe temperature with the radiator cap OFF. As the coolant circulates, any trapped air should then be able to escape through the fill hole in the radiator. Of course this is just one idea - are you confident that the thermostat is operating properly?
