There should be a reason to replace specific gaskets. An "engine gasket kit" contains many things that normally do not need to be serviced, unless you are planning to tear down the engine. Why replace head gaskets unless they are leaking or you are pulling the heads off? Now, if you have the engine out and want to proactively replace things like plenum gaskets, valve cover seals, etc, that would be a good move as far as reliability.
