Look at your own data. Read your own post. Here I'll quote you: "So 0w-50 has a 0 level viscosity when cool, and the viscosity when hot, is the equivalent of a single weight 50w when hot." To pick an oil you first pick the operating viscosity. There is a range for each...50 weight oils, 40 weight oils etc. Then you can pick how much the oil thickens when it cools by picking the small number. Look at the data you posted. The operating viscosity of a 0w40 is the same as a 10w40. the 0w just thickens less when cold. This is a good thing.
