Engine oil plays a big part in cooling the engine, and it can break down under high heat and heavy loads, which is what our engine is all about. A heavier weight oil is much more stable and resistant to oil shear. A lighter weight oil in super hot temperatures would experience more oil shear, thinning out the oil and offering less protection. If left unchanged, it will eventually thicken up again, but in the form of sludge and cause eventual engine seizure. That is just the extreme worst case scenario caused by severe negligence though. Anyone changing out their oil regularly will be fine, but I still do believe our hot engines benefit from heavier weight oil, especially later on in their life when you want the least amount of ware possible.
