I don't think there is a consensus regarding tire size, since the relative values of good looks, performance, and cost are all subjective. Look at photos -- or better yet, get to a show where you'll see lots of Z32s -- to determine which "stance" looks best to you. Determine how willing you are to trade comfort for performance, bearing in mind that more sidewall will give you a softer ride, but will also usually be less responsive in turns. On the other hand, more sidewall can also give you better traction, if you're into straight-line speed. Shop tire choices at TireRack.com to see how many options there are for various sizes, since the availability of tires in your budget/performance envelope will affect your choice of wheel sizes. Also factor in how you intend to your use your car, and the condition of the roads in your area (assuming it'll be street-driven). ...And consider the size of your brakes. Bigger brakes require more room within the wheel. Some don't mind putting 19" wheels over stock brakes. I think that looks ridiculous for several reasons, but to each his or her own. If performance matters to you, then also look for light weight wheels. Smaller wheels will weigh less than big wheels, all other things constant. You can find wheel weight charts on-line (e.g. here's an old one). In short, there are a variety of factors to consider, and you may weigh those factors differently than the next person does.
