Message Here's a brain dump of all the details I could remember. These apply to Hagerty at least, many of which are also true for Grundy so do the research yourself if serious.

-Hagerty covers way more vehicles than you might expect these days. Check out their "Do I Qualify?" link here
-I forgot to mention it in my post but my policy had a $250 deductible. They have options for zero, $500, $1000 and perhaps even more.
-No real mileage concerns. They didn't even ask me what it was currently or what I plan to drive. Depending on your exact dollar figure/policy they may ask you but for me they did not.
-Modifications are welcome but they have one restriction: NO NITROUS. So be careful what you say.
-Car must be garaged but a storage unit is also acceptable. They didn't ask for proof of this but I did include a photo of it, figuring it'd speed along the underwriting process.
-They want pictures of the exterior and interior/engine of the car.
-They can also cover memorabilia and tools!
-They do not care if you track/race your car but it will not be covered if damaged on the track. However, they WILL cover it if damaged in the parking lot or in the pits, say if someone backs into it.
-If you plan to bump up the coverage in the future, save any receipts and/or take pics of what you've changed or added to the car.
-Your driving record is important. Any serious offenses in the last 5 years such as DUI or reckless driving can get you denied. Also, an excessive amount of moving violations can do that as well. 2-3 regular tickets should be fine.
-You must have a regular use (daily driver) vehicle and it should be newer in year than the vehicle you want the policy on.
-Included in the cost of my policy is Hagerty Road Side Assistance (flat bed towing) as well as inclusion in a Historic Vehicle Association. It's around $30-$40 and can be removed I think.

One additional thing is how a non-totaled situation works. Obviously if the car is toast, you get your full amount but what if it's just damaged? Some good news there:

-They will cover exact part replacement and will work with you if an exact match doesn't exist anymore.
-You can use any shop you choose to do the work, including yourself if you turn your own wrenches. I'm not sure how they calculate labor but supposedly they can reimburse you accordingly.

The last thing I wanted to say is to remember that this is an insurance company after all and they are all about risk. They can deny you for various reasons and just because you meet the criteria I met doesn't guarantee you'll get approved. So be courteous when speaking with them, get your documentation in order, have clear pics of the car and get all your ducks in a row to increase your chances. Good luck!
