Its about just how hard you can torque them, which is directly related to how well the combustion chamber is sealed off under high pressures. Of course getting the right head gasket is very important as well. I've never seen an issue with a factory head bolt either, Nissan was not slacking when they designed the VG. But the math and the results don't lie, when you really plan to make a LOT of power, it's just foolish not to upgrade given the cost vs. risk. What I'd like to see is if an engine was run just under the breaking point of the head gasket (or the bolt), would the head bolt measure a different thickness (miniscule of course) on the shank to show the stretch? Would it be that permanent or would it snap back?
