Hit up DP-Review and do some research, take a visit to a local camera store and see what "feels" best. Some cameras look great on paper but the feel is awful, the Digital Rebels come to mind along with the Nikon D40. So, that being said having used many different platforms in everything from weddings to IRL races, I prefer Nikon. My first DSLR was a Nikon D70 and I love the thing to death, hell I even often grab it over my new D2X or my older D200. Couple it with a nice versatile lens, such as the 18-70 DX series wide angle kit lens and you have a great starting point. Then pickup a cheap Nikkor 50mm fixed and start experimenting and learning your settings. Once you have all that done, grab a nice i-TTL flash like the SB600 or SB800 and a good 70-200 or even a nice used 300mm fixed. I would skip the true entry level cameras like the D40 and get something a little more robust that you can grow into, taking a look at a used D70s or a used D200 or a new D80.
